In May 2022 student chef Sam Watkins was named as the most promising young culinary talent in the UK at one of the country’s most prestigious awards ceremonies.

Sam, 18, from Loughborough, won the Promising Young Student gong at the British Culinary Federation’s gala dinner at the Grand Hotel in Birmingham.

The Eric Bruce Award, named after the Federation’s former Chairman and Vice-President, is presented to the college student chef in full or part time attendance who has shown the most enthusiasm and commitment to his or her chosen profession.

It is the latest in a string of deserved successes for the young cook who won a trip to Dubai in the Nestle Toque d’Or competition; finished second in the Young Risotto Chef of the Year to win a stage at the Italian Embassy and won a bronze medal in World Skills UK.

Sam, who also works at Sapori restaurant in Anstey after the owner was bowled over by her food in a competition, said: “When they read my name out I was shocked at first, but also had so much relief to know that all my hard work had paid off to be recognised and be given such an impressive title. I’m incredibly happy with it all really!

“This year has honestly been a bit surreal and hectic but also very exhilarating. I’ve enjoyed every day of it! As busy as it has been I want to keep going and pushing myself further and see what other accomplishments I can achieve as it’s been a very fun year! I can’t thank the hospitality team and the College enough, their support has been fantastic.”

She was nominated by her college tutor Darren Creed who described her as an “exceptional student” who has impressed tutors since day one.

Darren said: “She is like a sponge, absorbs everything you teach her and has developed skills which are far beyond her level.

“What is so refreshing about Sam and her undoubted ability and dedication is her personal attitude – she remains very humble and unassuming even after all of her success.

“She always gives 100%, keeps an open mind and is always striving to be better. On top of this, she remains a helpful, caring and modest professional and we couldn’t be prouder of her deserved achievements this year.”
